Hervé Restaurant opened in April 1996 and is now considered one of the top restaurants in the Virgin Islands. The cuisine is a mix of contemporary American and classic French with Caribbean influences.
Hervé Paul Chassin, the proprietor, has over 30 years experience in the food and beverage industry in St. Thomas. He began his career in fine restaurants in France, London and Washington D.C. Now, he has created his own restaurant to express his culinary philosophy: delicious, high-quality food, with great service, reasonable prices with a spectacular atmosphere.
