When Leiden was finally rescued on October 3, the story goes that the fleeing Spaniards left behind a bubbling kettle of stew containing potato, freshly introduced to Europe from the Spanish colonies in the Americas.

This made a huge impression on the starving people of Leiden who had lost many thousands to hunger during the siege. The original kettle now lies in the Lakenhal Museum ... and hearty stew is the cornerstone of Dutch cuisine.

The stew became the forerunner of Dutch favourite, Hutspot. More a hearty meal than a side dish, Hutspot is very popular during the long winter. It is a thick mix of boiled and mashed potatoes, carrots and onions served with stewed meat.

Hutspot is one version of the very down-to-earth typical Dutch winter meal stamppot (or hotchpotch). There is also wortelstamppot with mashed potatoes mixed with carrots, or zuurkoolstamppot where sauerkraut is mixed with the mashed potatoes. This is served with fried bacon or sausage. Sometimes curry powder and pineapple is added.
