Kong Hans is based on the classic traditions of French gastronomy supplemented by inspiration from the cuisines and raw materials of other countries. At the same time the trend is towards greater simplicity. In former times a dish could not be elaborate enough: today it must 'true to its origins', that is to the raw materials of which it is composed.
The simpler the cuisine is, the better the raw materials must be!
