During the New Year festivities of Rosh Hashana especially, honey is used liberally for dishes sweet and savoury. It symbolises the wish for a sweet year ahead.
Honey cake is a traditional favourite during these festivities. This moist cake is enlivened with nuts and spices … delicious!
Honey Candy is another sweet treat. Honey syrup forms the base of the recipe, and many ingredients can be added according to taste and custom. Favourite ingredients include poppy seeds, tahini, matzoh, carrots, or ground ginger.
Date Haroset is made from a paste of ingredients such as dates, raisins, walnuts, apple, cinnamon, ginger and passover wine. The mixture is refrigerated and formed into bite size morsels. Date Haroset is traditionally served during Passover. It is symbolic of the bricks and mortar used to build the Egyptian cities when the Jews were enslaved by the Egyptians before the time of Moses.
