Coffee is best enjoyed when it is freshly roasted. Coffee is a perishable product and there are some basic rules for buying and storing of coffee if you want to enjoy it at its peak flavour.
Unroasted, green coffee beans can be stored for over a year. However, they are prone to absorbing strong odours, so it is advisable to store the beans in airtight glass or ceramic containers as metal and plastic interferes with the taste.
It is the caramelisation caused by the roasting process that gives coffee its great taste. The taste of coffee is at its best a day or two after roasting, but this richness begins to deteriorate after that. Once roasted, coffee beans begin to stale as oils released in the roasting process begin to break down. It is best to only buy a supply of one or two weeks roast coffee beans at a time if you want to enjoy the flavour of the coffee at its best.
